Ingredients for 4 servings:

  • 500 g flour (wheat flour)
  • 5 eggs
  • 1 tsp salt
  • 90 ml water
  • 100 g mountain cheese
  • 100 g cheese (Appenzeller)
  • 100 g cheese (Emmental)
  • 4 onions
  • oil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Beat flour, eggs, water, and salt with a dough hook until the dough bubbles. Let the dough swell a little longer. Grate the spaetzle into boiling water, bring to a boil briefly, and then skim off the excess liquid with a slotted spoon. Grate the cheese. Grate the onions and brown them in oil. Layer everything in a warmed bowl and season with salt, pepper, and paprika. Serve with lettuce or iceberg lettuce.
