Ingredients for 2 servings:
- 400 g flour (wheat flour)
- 4 eggs
- 1 tsp, leveled sea salt
- 150 g cheese, Allgäu Emmentaler grated
- 50 g clarified butter
- 12 tbsp water
- 2 onions

Simply good!
Sift the flour into a bowl, make a well in the center, and mix in the eggs, salt, and a little water, starting in the center. Gradually add the remaining liquid, making sure there are no lumps. Beat the dough until it bubbles. Place the dough in portions into boiling salted water using a board, scraper, or press. The spaetzle are done when they float to the surface. Remove the finished spaetzle from the cooking water with a slotted spoon and briefly dip them in fresh, warm water. Keep the spaetzle warm in an ovenproof dish in the oven, sprinkling each layer with a little grated cheese. The top layer should be cheese. Cut the onions into rings and sauté in clarified butter until golden brown. Sprinkle over the cheese spaetzle before serving.
