Ingredients for 2 servings:

  • 2 turkey schnitzels, 150g each
  • 1 tbsp mustard, medium hot
  • Salt
  • pepper
  • 2 slice(s) Black Forest ham
  • 2 slice(s) cheese, butter cheese
  • ½ pot of basil
  • 1 tbsp clarified butter
  • 75 ml apple juice
  • 1 tbsp crème fraîche
  • 1 tsp sauce thickener, light

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pound the turkey schnitzel very thinly or have the butcher slice it thinly for roulades. Brush the turkey schnitzel with mustard, season with salt, and pepper. Place a slice of ham and cheese on each schnitzel. Pick the basil leaves and scatter them on top, reserving a few for decoration. Roll up the schnitzel and secure them with wooden skewers. Fry the rolls all over in hot clarified butter for about 5 minutes. Pour in 50 ml of apple juice, cover, and simmer over low heat for 15 minutes. Remove the turkey rolls and keep warm. Add the remaining apple juice to the meat juices, stir in the crème fraîche, add the gravy thickener to the hot liquid, and season with salt and pepper. Serve the cheese rolls with the sauce and sprinkle with basil leaves. Serve with apple gratin or the usual side dishes such as rice, potatoes, or pasta.
