Cheesecake with Raisins
The perfect cheesecake with raisins recipe with a picture and simple step-by-step instructions.

- 1 tsp Baking powder
- 70 g Sugar
- 1 packet Vanilla sugar
- 1 piece Egg
- 100 g Soft butter
Cheese mass
- 1 kg Lowfat quark
- 4 piece Egg yolk
- 4 piece Protein
- 130 g Sugar
- 1 packet Vanilla sugar
- 1 packet Vanilla pudding
- 100 g Raisins
- There is a little story about this cake. It took me 3 tries to bake it. The first attempt broke the old stove. The second attempt in a brand new stove it turned black because the stove got hotter than it should (manufacturing defect). Now on the third attempt he succeeded. Between the weeks of waiting for the new stove / replacement stove, I could only use the hotplates or cook sous vide. It was really strange without an oven.
- 2nd base: Knead all ingredients into a smooth dough with the food processor. Roll out 2/3 of the dough on the bottom of a springform pan (diameter 26 cm). Shape the rest of the dough into a roll, place it on the edge of the dough and press it about 5-3 cm high.
- Cheese mixture: Beat the 4 egg whites until stiff and set aside.
- Mix quark, egg yolk, sugar and vanilla sugar to a creamy mass. Mix in the custard well. Then fold the raisins into the mixture. Finally, carefully fold the beaten egg white into the curd mixture with a large whisk.
- Spread the quark mixture on the dough base and smooth it out. Bake in the preheated electric oven at 175 degrees top / bottom heat for 60-75 minutes. The baking time can vary depending on the oven.
