Bread / Rolls: Spicy Wholemeal Spelled Bread

  • 1 tablespoon Honey liquid
  • 2 tablespoon Natural yoghurt
  • 100 ml Lukewarm water
  • 0,5 cube Fresh yeast
  • 500 g Wholemeal spelled flour
  • 1 tablespoon Salt
  • 1 tablespoon Ground caraway
  • 1 teaspoon Ground fenugreek
  • 250 ml Lukewarm water
  • 1 tablespoon Rapeseed oil
  1. Dissolve the yeast in a mixture of water, honey and yogurt. Let stand covered for half an hour.
  2. Mix the flour with salt, caraway seeds and fenugreek in a mixing bowl and knead in the yeast mixture.
  3. Now slowly add the rest of the water and the oil and stir until a homogeneous dough that does NOT come off the edge of the bowl is formed.
  4. Line a glass mold with baking paper and dust it with flour. Pour in the dough and let it rise in the oven at approx. 40 ° C until it has enlarged significantly.
  5. Now bake the bread at 230 ° C in a non-preheated oven for about 25 minutes with convection and push a tray under the wire rack.
  6. After 25 minutes, reduce the temperature to 210 ° C and pour a glass of cold water onto the tray. This creates water vapor that makes the bread nice and crispy. Bake for another 15-20 minutes.
  7. After the baking time, lift the bread out of the bowl and peel off the baking paper, let it cool down and enjoy the first piece only with butter.
  8. This strong bread does not need a long dough and is therefore ideally suited for a bread emergency. You can also add grains to the dough, such as sunflower seeds, pumpkin seeds, nuts or herbs.
