Ingredients for 1 servings:

  • 200 g flour
  • 150 g butter
  • 2 tbsp crème fraîche
  • 200 g cheese, grated (Emmental)
  • salt and pepper
  • e.g. chili powder or paprika or herbs
  • 1 egg yolk
  • some condensed milk

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Using a dough hook, combine flour, butter, crème fraîche, and cheese with seasonings to taste to form a shortcrust pastry. Wrap the dough in aluminum foil and refrigerate for at least 1 hour. Preheat the oven to 180°C. Roll out the dough on a floured surface and cut out cookies about 1 cm thick. Place the cookies on a baking sheet lined with baking paper. Whisk the egg yolk with a little condensed milk and brush over the cookies. Bake for 15-25 minutes, depending on how brown and crispy you want the cookies. The cookies will keep in a tin for about 3 weeks.
