Cherries with rosemary

Ingredients for 1 servings:

  • 1.2 kg cherries
  • 200 g sugar
  • 750 ml red wine
  • 1 sprig(s) rosemary
  • 100 ml cherry juice
  • 25 ml brandy
  • 2 orange(s), untreated

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 43 minutes

Pit the cherries. Caramelize the sugar in a large saucepan. Deglaze with red wine and cherry juice and simmer until the caramel has dissolved. Add the rosemary. Juice the oranges, zest 1/2 of the orange, and add the juice and zest to the red wine. Add the cherries and simmer for about 8 minutes. Remove the rosemary. Then add the brandy, pour the cherry compote into jars, and seal the jars.
