Cherry and quark casserole

Ingredients for 4 servings:

  • 2 tbsp butter or margarine, soft
  • 100 g sugar
  • 3 egg yolks
  • 1 vanilla pod(s) or vanilla sugar
  • 50 g semolina
  • 500 g low-fat curd cheese
  • 1 lemon(s), untreated, juice and zest
  • 500 g cherries
  • 3 egg whites
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cream the butter or margarine until smooth, then gradually stir in the sugar and egg yolk. Split the vanilla pod and scrape out the seeds. Stir the semolina, quark, lemon zest, and juice into the butter and egg yolk mixture. Wash and pit the cherries, and stir into the quark mixture. Beat the egg whites until stiff, then carefully fold in the mixture. Pour the mixture into a greased baking dish. Bake at 180°C (preheated) for about 35 minutes. It’s ready when a light brown crust has formed on top.
