Semolina casserole with apricots

Ingredients for 6 servings:

  • 1 kg apricot(s), fresh
  • ½ lemon(s)
  • 125 g butter
  • 500 g natural yogurt
  • 4 eggs
  • 150 g cane sugar
  • 200 g flour (all-purpose flour)
  • 200 g semolina
  • 1 packet of baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Melt the butter and let it cool. Squeeze the lemon. Stir the yogurt, eggs, lemon juice, and sugar into the melted butter. Mix with the flour, baking powder, and semolina until a smooth batter forms. Pour the batter into a large baking dish. Wash and pit the apricots, and spread them over the batter. Bake at 180°C for about 30 minutes.
