Ingredients for 1 servings:
- 100 g butter or margarine
- 100 g sugar
- 100 g flour
- 100 g cornstarch
- 4 eggs
- 1 packet of vanilla sugar
- ½ pack of baking powder
- 1 dashes lemon juice
- 1 jar sour cherries
- possibly chocolate shavings

Sunken Cherries
Cream the sugar, butter (or margarine), vanilla sugar, and eggs until fluffy. Add the flour, half the baking powder, and cornstarch; mix until smooth, and add a squeeze of lemon juice. (I recently stirred some dark chocolate shavings into the batter; it tasted absolutely delicious, especially with the sour cherries.) Pour the batter into a greased round baking pan. Finally, add the cherries to the batter and spread them out evenly. Bake at about 160 degrees Celsius (depending on your oven) for 40-50 minutes. I always do the toothpick test. Let the cake cool and sprinkle with powdered sugar. Another little tip: Try making the cake with peaches (I use canned pie peaches, which are nicely sliced) instead of cherries.
