Cherry marzipan muffins

Ingredients for 15 servings:

  • 150 g cherry(s) (sweet cherries), fresh, or morello cherries from the jar
  • 125 g butter, soft
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 2 m.-sized eggs
  • 250 g flour
  • 1 tsp baking powder
  • 4 tbsp milk
  • 2 pinches of lemon peel
  • 100 g marzipan (raw mass)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

First, preheat the oven to 175°C. Wash, hull, and pit fresh cherries (let the cherries drain from the jar). Cream the butter with the sugar, vanilla sugar, and eggs until fluffy. Mix the flour with the baking powder, then fold it into the egg mixture along with the milk, lemon zest, and chopped marzipan. Arrange 30 paper baking cups (two inside each other) and then fill with the batter. Distribute the cherries on top and press them in gently. Place the cups on a baking sheet. Bake the muffins in the oven for about 25-30 minutes. Let them cool and dust with powdered sugar, if desired.
