Cherry muffins

Ingredients for 12 servings:

  • 1 jar morello cherries, well drained
  • 80 g sugar
  • 250 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 50 g margarine, semi-skimmed
  • 1 egg(s)
  • 200 g yogurt, vanilla yogurt, can be replaced with sour cream if desired
  • 1 packet of vanilla sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 200°C. Cut the cherries into small pieces, reserving a few for garnish. Mix the chopped cherries with 2 tablespoons of sugar (from the 80g) in a bowl and set aside. Mix the flour, sugar, baking powder, baking soda, and salt. Melt the margarine in a saucepan, then remove from the heat and mix with the egg, vanilla sugar, and yogurt. Add everything to the flour mixture and mix well, finally stirring in the cherry pieces. Divide everything between muffin cups (or a muffin tin), top with the reserved cherries, and bake for about 20 minutes. After baking, let cool in the tin for about 10 minutes, then transfer to a wire rack. If desired, glaze with icing.
