Cherry muffins with chocolate chips

Ingredients for 1 servings:

  • 200 g sugar
  • 1 packet of vanilla sugar
  • 40 ml cherry juice or apple-cherry juice
  • 200 g butter
  • 1 pinch of salt
  • 4 eggs
  • 300 g flour
  • 1 packet of baking powder
  • 250 g cornstarch
  • 1 pot of yogurt, approx. 200 g
  • 50 ml milk
  • 200 g dark chocolate
  • 350 g sour cherries from the jar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Place the sugar, vanilla sugar, and apple-cherry juice in a bowl. The sugar should dissolve slightly in the apple-cherry juice. Add the butter and salt and beat until fluffy. Beat the eggs, one at a time, into the batter. In another bowl, combine the flour, baking powder, and cornstarch. Slowly stir the mixture into the batter. Add the yogurt and milk. Chop the dark chocolate into small pieces and stir it into the batter. Drain the cherries and fold them into the batter with a spatula. Line a muffin tin with baking cups and preheat the oven to 180°C (top/bottom heat). Divide the batter between the baking cups. Bake the muffins for 25-30 minutes, until they have a light golden brown crust. Use a skewer to check if the muffins are cooked through. Let the muffins cool slightly before eating.
