Ingredients for 6 servings:
- 1 cake base (sponge cake base)
- 3 tsp espresso, instant or cappuccino powder
- 3 tbsp water, hot
- 80 ml Amaretto
- 1 jar morello cherries, drained
- 100 g quark, low-fat quark
- 200 g mascarpone
- 2 tbsp sugar
- 1 packet of vanilla sugar
- 5 tbsp milk
- 100 g cream, stiffly whipped
- some cocoa powder, for dusting

Line the dish with the sponge cake base; you can cut it into strips or cut it to fit the shape. Drizzle with the espresso, hot water, and Amaretto mixture, and top with the cherries. Mix the quark, mascarpone, sugar, vanilla sugar, and milk. Carefully stir in the whipped cream and spread this mixture over the cherries. Dust with cocoa powder shortly before serving. Let it set for at least 4 hours. Instead of the sponge cake base, you can also use sponge fingers or leftover sponge cake.
