Cherry tomato tortellini with shrimp

Ingredients for 2 servings:

  • 250g tortellini
  • salt water
  • 1 bunch of spring onions
  • 150 g cherry tomatoes
  • 250 g shrimp tails or smoked salmon
  • 1 tbsp herbs (frozen)
  • 100 ml cream
  • some broth, instant
  • pepper
  • 1 tbsp butter
  • some flour
  • 200 ml broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

First, cook the tortellini in salted water according to the instructions. Meanwhile, slice the spring onions into rings. Brown the prawns in butter, remove them, and in the same pot, make a roux with the flour. Deglaze with stock and add the cream. Simmer for 2 minutes. Add the prawns, spring onions, herbs, and tomatoes, and season with stock and pepper. Simmer for another 3 minutes. Pour the sauce over the tortellini and serve. If making this without prawns, simply make a roux, follow the rest of the recipe, and finally, arrange smoked salmon strips on the plate to serve.
