Cherry tomato vinaigrette

Ingredients for 1 servings:

  • 300 g cherry tomatoes
  • 3 tbsp olive oil
  • ½ onion(s), red, chopped
  • 1 tbsp red wine vinegar
  • Salt
  • Black pepper, freshly ground
  • ½ tsp sugar
  • 2 tbsp chives, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Halve half of the cherry tomatoes (preferably the larger ones). Heat 1 tablespoon of oil in a pan and sauté the onion over medium heat for about 4 minutes. Stir well. Now add all the tomatoes and sauté for about 5 minutes, stirring occasionally, slightly crushing some of the tomatoes. Add 1 tablespoon of red wine vinegar, 2 tablespoons of olive oil, and 1/2 teaspoon of sugar, and season with salt and pepper. Finally, add the chives and serve warm or at room temperature. Delicious with fried fish or meat, but can also be served with pasta.
