Chestnut Soup with Apple Dip and Onion and Ham Topping

Ingredients
 

  • 50 g Serrano ham or parma
  • 1 Red Onion
  • 1 tsp Rapeseed oil
  • 250 g Chestnuts pre-cooked and peeled
  • 1 handful Fresh thyme
  • 400 ml Poultry broth
  • 75 ml Apple juice
  • 75 g Cream cheese
  • Salt and pepper
  • Chives fresh

Instructions
 

  • Cut the chestnuts into pieces and cook with the thyme in the poultry stock for about 15 minutes. In the meantime, cut the ham into strips and the cleaned onion into rings. Heat the oil and sauté the onion until translucent. Then add the ham and cook briefly.
  • Mix the apple juice with the cream cheese and season with salt and pepper. Puree the soup and also season with salt and pepper. Let it get really hot again. Place on a plate, garnish with the onion and ham mixture, pour a dollop of apple dip over it and sprinkle with chives.
