Ingredients for 1 servings:

  • 2 tbsp chia seeds (equivalent to approx. 30 g)
  • 5 tbsp water, warm
  • 250 g almonds, ground or nuts
  • 40 g sugar
  • 2 tbsp cinnamon
  • 1 pinch of salt
  • 2 tbsp agave syrup
  • 50 g powdered sugar
  • 1 tbsp water

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

vegan cookies with chia seeds, for about 25 pieces

Grind the chia seeds in a mortar and pestle, then let them soak in 5 tablespoons of warm water for at least 1 hour. Mix the remaining dough ingredients with the chia seeds and knead into a dough. If the dough is still too dry, simply add a little water. Preheat the oven (150°C fan/convection oven). Roll out the dough on a floured surface and cut out the cookies using a star cutter. Then place them on a baking sheet lined with baking paper. Bake the cookies for 10-15 minutes. Then let them cool. In the meantime, make a glaze from powdered sugar and water and spread it over the cooled stars. Makes about 25 cookies.
