Ingredients for 1 servings:

  • 3 tbsp chia seeds, processed into gel, see my recipe Chia Gel
  • 3 tbsp coconut milk
  • 1 tsp xylitol (sugar substitute)
  • 1 pinch of cinnamon
  • some vanilla, ground
  • some strawberries or blueberries
  • e.g. papaya
  • some fruit puree, cold stirred, optional

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

First, here’s the link to the chia gel recipe: http://www.chefkoch.de/rezepte/2856451437767094/Chia-Gel.html Mix the chia gel with the coconut milk and sugar until the sugar dissolves. Add cinnamon and vanilla. Wash the berries and chop them if desired. Peel the papaya and cut into pieces, adjusting the amount as needed. If you have cold-stirred fruit puree, you can add a few tablespoons.
