Chia pancakes

Ingredients for 1 servings:

  • 2 small bananas
  • 4 eggs
  • 2 tbsp chia seeds
  • Cinnamon powder or vanilla extract
  • possibly protein powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Mash the bananas well. Whisk the eggs and stir in. Mix in the chia seeds and a bit of cinnamon or vanilla. You can also mix in a tablespoon of protein powder for chia protein pancakes. Patiently cook the small pancakes in the pan over low heat (gas mark 5). As soon as the bottom is cooked enough for you to slide a spatula under the pancake, carefully loosen the pancake and continue cooking until you can flip it over. Cook the other side again until golden brown. This mixture makes about 6 small pancakes. You can eat them on their own or with fruit curd. I think they’re sweet enough to be delicious for breakfast.
