Ingredients for 1 servings:
- 300 g spelt flour or rye flour
- 180 g wheat flour
- 70 g chia seeds
- 2 tbsp, heaped protein powder
- 12 g salt
- 320 ml water, warm
- ½ cube of yeast
- ½ cup mixed grains
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes
Place all ingredients, except the seeds, in a bowl and mix. Knead the dough for about 10 minutes until it is just slightly sticky. Add a little more flour if necessary. Grease a loaf pan, spread the dough out lengthwise and press it down. Place a wet cloth over it and let it rest for 30 minutes so the yeast can rise. Preheat the oven to 200 degrees Celsius. Spread the seeds over the surface and press down lightly. Bake the bread for about 45 minutes. If it is still very light on the sides, leave it in the oven for a moment longer. After baking, remove the bread from the pan and let it cool completely. It should be kept in a sealed container, otherwise it will dry out quickly.
