Ingredients for 1 servings:
- 2 tbsp chia seeds
- 50 ml water
- 50 ml soy milk (soy drink), vanilla flavor
- 1 tbsp hazelnuts, chopped
- 1 tsp brown sugar
- ½ tsp cinnamon

Measure out all the ingredients and have them ready. Mix the chia seeds with the water in a glass and stir with a spoon for about 2 minutes. The mixture will thicken. Now add the soy milk and mix everything well with a spoon. Place the glass in the fridge for at least 15 minutes, or longer if you have time. The longer the mixture rests, the more the chia seeds will swell and the mixture will turn into a nice, thick pudding. In the meantime, put the chopped hazelnuts, brown sugar and cinnamon in a pan and let it caramelize, stirring constantly. It is important that you have a little patience and do not turn the stove up to full power, otherwise the ingredients will burn. Once you have done this, the brittle should definitely cool down. Now take the chia pudding out of the fridge, sprinkle the hazelnut and cinnamon brittle on top and serve.
