- 1 pizza dough (chia pizza base), recipe in the database under “Basic recipe low-carb pizza base, pizza bread, wrap”
- 1 small cauliflower
- 1 small fennel
- 200 g mushrooms, brown
- 1 large carrot(s)
- 1 large red pointed pepper
- 150 g pak choi
- 80 g leek
- 1 tsp soup seasoning
- 100 g goat’s cheese, alternatively cow’s milk cheese
- 4 large eggs
- 70 g sour cream or crème fraîche
- 200 g mozzarella, grated
- 4 leaves of garlic, optional
- 120 g smoked bacon, alternatively 2 Vienna sausages or 120 g smoked tofu
- some salt (Society Garlic Salt) or Himalayan salt
- some butter or oil
Instructions

Use a pre-baked “Basic Recipe Low Carb Pizza Base, Pizza Bread, Wrap” baking sheet. Cut a circle the size of a 28 cm springform pan and cut two strips, each 4 cm wide, for the edge of the springform pan. Line the bottom of the springform pan with parchment paper. Place the cut-out circle on the bottom of the pan, place the two strips on the edge, and set aside. Preheat the oven to 170°C (convection oven). Divide the cauliflower into florets, cook in salted water until al dente, and drain well in a colander. Meanwhile, finely chop the fennel, mushrooms, carrot, pointed peppers, leek, bok choy, and bacon, sausage, or tofu. Heat butter or oil in a pan and lightly sauté the chopped vegetables with the bacon, sausage, or tofu. Season with soup seasoning and chopped garlic, if desired. Transfer everything to the springform pan along with the cauliflower from the colander. In a mixing bowl, combine the cream cheese, eggs, salt, sour cream, and 120g mozzarella and pour over the vegetables. Sprinkle the remaining mozzarella over the mixture. Bake in the oven on the bottom rack for 25 minutes. Cover with aluminum foil for the last 10-15 minutes, if necessary. After 25 minutes, turn off the oven and let stand for another 10 minutes. Variation: You can also use ground meat and other vegetables.
