Chia seaweed rolls

Ingredients for 1 servings:

  • 225 g spelt meal, coarse
  • 350 g Flour Type 550
  • 1 tsp, heaped salt
  • 1 tbsp soy flour
  • 1 tsp seaweed powder
  • 20 g chia seeds
  • ½ cube of yeast
  • 0.33 tsp honey
  • 250 g natural yogurt
  • Oat flakes or grains
  • Milk for brushing

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 50 minutes

Crispy, healthy, delicious

Mix the bran and chia seeds with yogurt and let it rise for 1 hour. Dissolve the yeast in a little water with honey. Add all ingredients to a food processor. Let the yeast work for 15 minutes. Knead everything with enough lukewarm water until the dough is slightly sticky. Let it rise for about 1 hour. Then knead thoroughly; the dough should no longer be sticky; if not, add a little flour. Roll the dough into rolls and roll them in seeds or oatmeal, depending on your taste. Let it rise until the dough has doubled in size. Brush with milk and bake at 180°C for about 30 minutes until golden brown. The soy flour and seaweed powder can also be omitted; in this case, they are just chia rolls.
