Ingredients for 1 servings:
- 500 g wholemeal spelt flour
- 80 g chia seeds
- 2 tbsp olive oil
- ½ cube of fresh yeast
- 2 tbsp vinegar (I recommend walnut vinegar or balsamic vinegar)
- 1 tbsp soy sauce
- 450 ml water, lukewarm
- Salt
Instructions
Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 1 hour; Total time approx. 9 hours 20 minutes
vegan, whole grain, with yeast
Dissolve the yeast in lukewarm water. Mix all dry ingredients. Now add the water-yeast mixture. Add the vinegar and oil. Knead everything together or mix with a dough hook. Let the dough rise, covered with a damp tea towel; otherwise, let it rise for at least 3 hours. Preheat the oven to 200°C (fan/convection oven). Bake the bread in a preheated Roman pot or in a loaf pan for 1 hour.
