Ingredients for 1 servings:
- 40 g spinach, young, chopped, corresponds approximately to one portion of frozen young spinach from Bofrost
- 3 eggs
- 1 tbsp, sautéed chia seeds
- 1 pinch of salt
- 1 pinch(s) of pepper
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Very easy and quick to prepare, extremely filling and healthy.
Place the baby spinach in a non-stick pan and thaw over low heat. Beat the eggs well in a bowl and add a pinch of salt, a pinch of pepper, and the chia seeds. Once the spinach has thawed, spread it evenly in the pan and add the egg and chia mixture. Then increase the heat to medium and let it set. Carefully flip the omelet and cook for a few more minutes.
