Chia-vanilla curd

Ingredients for 4 servings:

  • 500 ml milk
  • 40 g cornstarch
  • 3 tbsp vanilla sugar, real
  • 1 egg yolk
  • 2 tbsp, heaped chia seeds
  • 4 tbsp milk
  • 500 g quark
  • 4 tbsp sugar

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

with homemade vanilla pudding

Whisk the cornstarch and vanilla sugar into the milk until lump-free, then bring to a boil in a saucepan while stirring continuously. Remove the pan from the heat and quickly stir in the egg yolk. I always use a whisk for everything. Let the pudding cool slightly. Meanwhile, let the chia seeds swell in the milk. Then mix the chia seed milk with the quark and sugar and stir in the pudding. Ladle into glasses and serve with fruit or compote, as desired.
