Chicas Potatoes and Sobrasada

Ingredients for 2 servings:

  • 250 g jacket potatoes or boiled potatoes (pre-cooked)
  • 50 g sausage (sobrasada)
  • olive oil
  • Black pepper, freshly ground
  • Salt

Working time approx. 10 minutes; Total time approx. 10 minutes

Potatoes with Mallorcan paprika sausage

Peel the potatoes, either quarter them and then cut them into about three more pieces, or cut the boiled potatoes into small pieces. Heat a little olive oil in a pan—not too much, as the sausage contains plenty of fat—and brown the potatoes all over. Add the sobrasada in small pieces, immediately reduce the heat, and wait a moment until the sausage has melted. Season to taste with salt and pepper, if desired, and serve immediately. This serves one as a main course, or two as a tapa.
