Ingredients for 1 servings:

  • 1 large potato, mainly waxy
  • 1 small onion(s)
  • 70 g black pudding in a ring (Flönz)
  • 2 tbsp, heaped applesauce
  • some salt and pepper, white, freshly ground
  • Oil, neutral, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Himmel un Ääd with Cologne caviar and fried onion rings, interpreted in a completely different way

Peel the potatoes, rinse, pat dry, and coarsely grate them. Peel the onion and slice into thin rings, and thinly slice the Flönz (smoked potato). Heat the oil in a pan, add the grated potatoes, and flatten them into quick rösti, season with salt and pepper. Turn over after 3-4 minutes and fry for another 3-4 minutes. Remove from the pan and remove some of the fat on a piece of kitchen paper. Brown the onion in the hot oil and also remove some of the fat on a piece of kitchen paper. Place the quick rösti on a plate or board, top with the Flönz (smoked potato), place the applesauce in the center, place the onion on top of the applesauce, and serve immediately. This also works in a mini version for a finger food buffet.
