Ingredients for 6 servings:

  • 8 chicken breast fillets
  • 500 g mushrooms, fresh
  • 2 cans of pizza tomatoes
  • 2 cups of cream, 200 ml each
  • 1 red chili pepper(s)
  • 8 tbsp sauce, (Texicana salsa)
  • 1 large onion(s)
  • 1 bag(s) of grated cheese, 200 g
  • salt and pepper
  • Garlic
  • Herbs, Italian
  • Oil or clarified butter
  • possibly tomato(s), fresh

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

Preheat oven to 200°C fan/convection oven. Wash the chicken breasts and pat dry. Then rub with salt and pepper. Sear in a little oil or clarified butter. Place the chicken breasts on a baking tray lined with baking paper. Slice the mushrooms and onion and scatter them over the meat. Squeeze the garlic over the meat and scatter it over the meat, if desired. If you like, add fresh tomatoes (chopped) to the meat. Mix the pizza tomatoes, chopped chili pepper, cream, and 8 tablespoons of Texicana salsa together in a bowl and pour directly over the meat. Then scatter the Italian herbs over the top. Sprinkle the cheese over the top. Place in the hot oven and cook for about 40 minutes. Serve with rice and flatbread.
