Chicken and Avocado Burritos

Ingredients for 2 servings:

  • 4 flour tortillas
  • 1 large avocado(s)
  • 1 cup sour cream, 200 g
  • 1 bag of grated cheddar cheese (or other cheese)
  • 4 tbsp salsa
  • 2 chicken breast fillets
  • ½ lettuce(s)
  • 4 tsp Mexican spice mix
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat oven to 200°C (top/bottom heat) or 180°C (fan oven). Cut the chicken breast into bite-sized pieces and fry until crispy. Sprinkle with the seasoning mixture. Pit the avocado and mash the flesh in a bowl with a fork. Add 3/4 of the cheddar cheese, 3/4 cup of sour cream, and the salsa; mix until creamy. Season with salt and pepper to taste. Cut the lettuce into strips. Spread the tortillas with the avocado mixture. Arrange the lettuce and chicken breast fillet on top. Fold over two sides and roll up. Place the rolled burritos on a wire rack lined with parchment paper. Spread with the remaining sour cream and sprinkle with cheese. Bake until golden brown, and then enjoy.
