Ingredients for 2 servings:
- 400 g chicken breast fillet(s)
- 150g mozzarella
- 125 g crème fraîche with herbs
- 1 tbsp cornstarch, fine
- 100g bacon
- Salt
- pepper
- Paprika powder

Wash and trim the chicken breast fillet. Then cut it into “bites” – I first cut the meat into thirds and then halved the thick side so that all the pieces were the same size and thickness. Season them with salt, pepper, and paprika on both sides and wrap them in bacon. For the smaller pieces, one slice is enough – for the larger pieces, two. Preheat the oven to 160°C fan/convection oven or 180°C conventional oven (I tried fan/convection oven). Cut the mozzarella into thin slices. Mix the cup of crème fraîche with the cornstarch and pour it into a very lightly greased (almost wafer-thin) baking dish. Spread it evenly to ensure the bottom is well covered. Place the chicken bites on top and top with mozzarella. Let the whole thing in the oven on the middle rack for about 30 minutes. We also made some carrot mash to go with it. Since the sauce is so delicious, it also works with rice, pasta or baguette.
