Chicken and Broccoli Casserole

Ingredients for 6 servings:

  • 400 g chicken strips
  • 200 g pasta, e.g. tomato-basil pasta from Birkel
  • 400 g mushrooms, white
  • 300 g broccoli, frozen or fresh
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 2 garlic cloves
  • 2 spring onions
  • 1 onion(s)
  • 200 g sheep’s cheese
  • 200 g Emmental cheese, grated
  • 400 ml cream
  • 100 ml crème fraîche
  • 3 tbsp tomato paste
  • salt and pepper
  • chili powder
  • Herbs, Italian
  • chili flakes
  • oregano
  • 1 tbsp olive oil for frying

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

for a casserole dish approx. 40 x 35 cm

Cook the tomato and basil pasta according to the package instructions until al dente. It will cook slightly more in the oven later. If necessary, thaw the frozen broccoli and chop it finely. Cook for about 10 minutes until al dente, drain, and rinse with cold water. You can also use fresh broccoli. Finely dice the bell peppers and slice the spring onions. Dice the feta cheese. Peel and finely dice the onion and garlic. Clean and slice the mushrooms. Prepare the sauce. Whisk together the cream, crème fraîche, chili, and Italian herbs to taste. Sauté the onions, garlic, and mushrooms together in the olive oil until hot. Remove the mushrooms, onions, and garlic from the pan, leaving the liquid in the pan. Fry the chicken strips in a separate pan and season with salt, pepper, and chili flakes. Fry the strips of chicken until browned to your liking. Add the tomato paste and stock and mix. Add the sauce to the meat and bring to a boil briefly. In the meantime, drain the pasta and rinse briefly with cold water to prevent it from sticking together. Cover the bottom of a casserole dish (approx. 40 x 35 cm) with pasta. Layer the pasta with peppers, feta cheese, broccoli, mushrooms with onion, garlic, and spring onions. Finally, spread the chicken strips and sauce on top. Finally, sprinkle the casserole with Emmental cheese and garnish with oregano. Preheat the oven to 200°C (fan oven) and bake on the middle rack for approx. 25-30 minutes, depending on the desired degree of browning. Serve with a light salad. Approx. 690 kcal per serving.
