Chicken and cabbage salad

Ingredients for 4 servings:

  • 500 g red cabbage
  • 3 spring onions
  • 6 sprigs coriander leaves
  • 3 chicken fillets, cooked
  • 40 g peanuts, salted
  • 1 tsp lime zest (finely grated), from an organic lime
  • 3 tbsp lime juice
  • 2 tbsp soy sauce
  • 3 tbsp chili sauce, sweet and spicy
  • 4 tbsp olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the red cabbage into quarters and remove the stalks. Then grate or slice the red cabbage quarters into thin strips. Slice the spring onions into thin rings. Chop the coriander. Tear the chicken breast fillets into small pieces. Roughly chop the peanuts. For the dressing, put the lime zest, lime juice, chili sauce, and olive oil in a small bowl and whisk to combine. Pour about a third of the dressing over the red cabbage strips and mix well. Then gradually add the remaining dressing and finally mix in the spring onions, coriander, and chicken. Sprinkle the peanuts on top to serve.
