Ingredients for 1 servings:
- 150 g broccoli florets
- 3 peach(s) (halves) fresh or unsweetened from the can
- 1 small chicken breast fillet(s)
- 1 tsp oil
- 1 tsp soy sauce
- ½ tsp curry
- 1 tsp nuts, chopped
- 30 g cheese, grated
- 2 tsp paprika powder
- 2 tbsp rice, cooked
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Cook the broccoli in salted water until al dente. Preheat oven to 200°C (top/bottom heat). Dice the peaches. Pat the chicken breast dry and sear it all over in oil. Season with soy sauce and curry sauce. Place in a baking dish. Spread the peaches, nuts, and cheese on top. Sprinkle with paprika. Bake in the hot oven for about 20-25 minutes. Serve with broccoli and rice. Note: This is a diet recipe that my family often requests. It’s also very popular with the kids.
