Ingredients for 4 servings:
- 200 g leek
- 2 tomatoes, firm
- 2 m.-sized apples
- 2 tbsp parsley
- 1 tsp thyme, chopped
- 1 tsp curry powder
- 4 turkey schnitzels (frozen ones are also suitable)
- 40 g cheese (e.g. Gouda, Emmental, etc.), grated
- 2 tsp vegetable oil (e.g. rapeseed oil or olive oil)
- Salt
- pepper

Clean the leeks and slice them thinly. Peel the tomatoes and wash or peel the prepared apples, then finely dice both. Sauté the leeks in hot oil over low heat for about 3-4 minutes. Then add the apples, parsley, thyme, and curry powder and sauté for another 2-3 minutes. Wash and dry the turkey cutlets, then season with pepper and salt sparingly. Mix the leeks and tomatoes. Place each cutlet on a piece of aluminum foil and cover with the vegetables. Seal the parcels tightly and place them in an ovenproof dish. Cook in a preheated oven at 200°C (top/bottom heat) (gas mark 3) for about 30-35 minutes. After this time, tear open the parcels and sprinkle with cheese, if desired. Return to the warm oven briefly until the cheese has melted. Serve with rice as a side dish.
