Chicken Bacon Bomb

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 20 slices of bacon
  • 150 g cheese
  • 250 g mushrooms, brown
  • some chicken seasoning or salt, pepper and paprika
  • 1 garlic clove(s)
  • olive oil

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

Cut the chicken breast fillets crosswise once, but do not cut all the way through, then unfold and place between sheets of cling film. Pound the fillets thinly with a meat tenderizer, then season. Slice the mushrooms, heat olive oil in a pan, and fry the mushrooms well. After a few minutes, add the crushed garlic clove. Finally, season with salt and pepper. Grate or dice the cheese. Now we need a cereal bowl. We need about 5 strips of bacon per bomb. Line the bowl with the bacon strips, leaving the strips hanging over the outside of the bowl; we’ll need them later to seal the bomb. First, add the pounded chicken breast to the bowl, followed by the mushrooms and cheese. Next, fold the chicken breast over, and then tuck the ends of the bacon strips over the chicken breast. You can prepare the bacon bomb in advance and then store it in the refrigerator until ready to grill. Preheat the gas grill to 175 degrees Celsius and grill the bacon bombs for about 40 minutes. The internal temperature should reach 70 degrees Celsius, then they’re done. If you like, you can spread BBQ sauce on the bacon bombs after 25 minutes and then continue grilling. You can also vary the filling: Mango and cheese are also delicious.
