Chicken Bolognese with Steamed Mozzarella Noodles

Ingredients
 

Steamed noodles:

  • 500 g Spelt flour type 630
  • 200 ml Milk warm
  • 50 g Butter
  • 0,5 cube Fresh yeast
  • 1 tsp Sugar
  • 10 g Salt
  • 1 Egg

Chicken Bolo:

  • 600 g Boneless Chicken Legs
  • 4 Shallots
  • 2 Garlic cloves
  • 3 Pc. Celeriac
  • 1 Carrot
  • 400 g Tomatoes
  • 2 tbsp Oil
  • 4 tbsp Tomato paste
  • 250 ml Pinot Noir
  • 4 Juniper berries
  • 1 tsp Telly cherry pepper
  • 4 Cloves
  • 4 Allspice grains
  • 1 Pc. Mace
  • 3 Bay leaves
  • Rosemary fresh
  • Fresh thyme
  • 1 tbsp Paprika powder
  • 1 tbsp Seasoned salt
  • 1 tbsp Garlic pepper
  • 3 tbsp Balsamic vinegar
  • 1 pinch Sugar
  • Telly cherry pepper

Damf noodle filling etc:

  • 250 g Mozzarella
  • 200 ml Water
  • 1 tsp Salt
  • 50 g Butter

Instructions
 

Steamed noodles:

  • Put the flour in a bowl and make a well. Then pour in warm milk with butter and crumble yeast into it, add sugar and mix. Dust with flour and let rise for about 15 minutes. Then add salt and an egg, knead everything well! Cover and let rise for at least 45 minutes!

Chicken Bolo:

  • Turn the chicken through the grinder or buy ready-made mince! Then peel the shallots, garlic and carrot. Finely dice everything. Clean the celery, peel and wash a little, dice finely. Wash tomatoes, cut in half, quarter and remove stalk, dice.

Preheat the oven to 180 degrees!

  • Heat the oil in a roasting pan and fry the mince and onions, paprika powder in it until hot, crumbly, then add the carrots and celery and fry with them. Add tomato paste, stir well, then fry the tomato cubes. Deglaze with red wine! Then juniper berries, allspice ... crushed a little and add to the sauce with seasoned salt and garip pepper. Wash the herbs, roughly chop them and add them too!
  • Now stew everything for at least 3 hours on the lowest heat!

Steamed noodles:

  • Meanwhile, knead the dough again and form 10 equal portions. Divide the mozzarella into 10 pieces and wrap each in a portion of dough. Shape into a ball and put in a greased baking dish!
  • Spread the salt water around the steamed noodles! Bake in the oven for 30 minutes!

Bolo:

  • Season the sauce with sugar, pepper and balsamic vinegar. If necessary, season again with seasoned salt and garlic pepper!
  • Serve the Bolo with the steamed noodles! Green salad goes well with it!
