Roast chicken in honey sauce

Ingredients for 4 servings:

  • 250 g honey, liquid
  • 100 g butter
  • 1 tsp curry powder
  • 1 ½ tsp mustard, hot
  • 75 ml tomato ketchup
  • 500 g chicken or turkey

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

The amount of meat is designed as a tapas dish for 4 people. If you want to serve the dish as a main course, you should adjust the quantity accordingly (sauce as desired). For the honey sauce, mix all ingredients except the meat in a saucepan and bring to a boil while stirring. Remove from the heat and allow to cool slightly (can also be made ahead). Dice the chicken and place in an ovenproof dish, pour over the honey sauce and mix well. Roast in a preheated oven at around 180°C for 35-45 minutes. White bread and a dry white wine or a dry sherry go best with it. You can also use chicken thighs instead of chicken. I made the dish as part of a tapas evening with friends and it was a huge hit.
