Chicken breast and wild garlic roulades with bacon and cheese

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 8 leaves of wild garlic, fresh
  • 8 slices of bacon
  • 100 g cheese, grated
  • salt and pepper
  • some clarified butter for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Halve the chicken breast fillets lengthwise and pound flat, then season with salt and pepper on both sides. Place a wild garlic leaf on each fillet and sprinkle with cheese (optional). Then roll up the fillets and wrap them in bacon. Because the bacon adheres well thanks to the fat on the edge, you don’t need skewers to secure them. Heat clarified butter in a non-stick pan and fry the roulades until crispy on all sides. Then cook at low heat for about 10 minutes, turning frequently.
