Chicken breast fillet in honey-carrot-banana curry

Ingredients for 2 servings:

  • 300 g chicken breast fillet(s)
  • 1 large carrot(s)
  • 1 small banana(s)
  • some honey
  • 2 tsp Greek yogurt
  • curry powder
  • salt and pepper
  • some butter
  • 100 ml milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Chop the chicken breast fillets into small pieces and season with salt, pepper, and a generous amount of curry powder. Brown them in the butter. Meanwhile, peel and chop the carrot, then add it to the pan. Peel the banana, dice it, and add it to the meat. Add a little honey and simmer for about 10 minutes. Deglaze with the milk and reduce. Stir in the Greek yogurt and simmer for another 10 minutes. Season again with curry powder, salt, and pepper, if desired. Serve with rice.
