Chicken breast fillet in spicy fruit sauce

Ingredients for 2 servings:

  • 2 portions of chicken breast fillet(s)
  • 1 banana(s)
  • 250 ml cream (reduced fat)
  • 1 tsp pepper, green pickled
  • 10 ml olive oil
  • curry
  • salt and pepper
  • Ginger
  • 1 garlic clove(s), pressed
  • 1 tsp, leveled sambal oelek

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Mix olive oil with 1 teaspoon of curry powder, garlic, sambal oelek, a little salt, ginger, and pepper. Dice the chicken breast fillets and mix with the marinade. Refrigerate overnight. Slice the banana and fry over low heat until creamy, stirring frequently. Mix with the cream, add the peppercorns, and season with salt, pepper, ginger, and curry powder. Sear the marinated meat until crisp. Reduce the heat, add the banana sauce, and let the meat simmer for a short while. Serve with rice.
