  • 3 tbsp pine nuts
  • 2 tbsp almonds
  • 100 g tomato(s), dried, drained weight
  • 1 tsp thyme, dried
  • salt and pepper

Italian classic, super delicious and easy to make yourself

Roast the pine nuts in a pan without oil. Be careful, they burn easily. Grind the almonds and pine nuts in a food processor, blender, or using an immersion blender. Gradually add the tomatoes. Add salt, thyme, pepper, and enough oil to reach the desired consistency. Use either the oil from the canned tomatoes or regular olive or sunflower oil. Note: Pesto is a true Italian classic. But why buy it from the supermarket when you can make it easily and deliciously at home? Instead of the usual green basil pesto, you can also try this delicious Pesto Rosso with sun-dried tomatoes. If you like, you can also refine it with a little garlic. It tastes delicious with pasta, on bread, or with fish dishes.
