Chicken breast on tomato, gratinated

Ingredients for 4 servings:

  • 4 chicken breasts
  • 6 tomatoes
  • 3 onions
  • 1 pack of smoked salmon
  • e.g. Parmesan for topping
  • basil
  • salt and pepper
  • 1 garlic clove(s)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Brown the chicken breasts in a pan. Peel or wash the onions and tomatoes and dice them. Arrange them in a baking dish. Press in the garlic clove and mix. Season everything with salt, pepper, and basil. Place the fried chicken breasts on the bed of tomatoes. Finely chop the salmon and spread it on top of the chicken breasts. Cover everything with grated Parmesan cheese. Bake in a preheated oven at 180°C (convection oven) for about 20 minutes. If you’re following a food combining diet, serve without any side dishes; otherwise, serve with croquettes or bread.
