Fried cucumber with chicken and avocado cream

Ingredients for 1 servings:

  • 1 chicken breast fillet(s) without skin, approx. 170 g
  • ½ avocado(s), approx. 100 g
  • 130 g low-fat curd cheese
  • 1 cucumber(s), approx. 210 g
  • 75 g diced ham, low-fat
  • 1 dashes lime juice or lemon juice
  • 1 tsp olive oil
  • 1 garlic clove(s)
  • e.g. salt and pepper
  • e.g. lemon pepper
  • e.g. paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

First, cut the fillet into smaller pieces and season with salt, pepper, and paprika. Then, fry the pieces in olive oil with the ham cubes in a well-coated pan. In the meantime, mash the avocado flesh with garlic and lime or lemon juice and mix with the quark. Add the fried ham cubes and season the dip with salt and lemon pepper. The ham will give the dip a bit of a salty flavor. Peel the cucumber and cut lengthwise into approximately 5 mm thick slices. Remove the chicken from the pan and briefly fry the cucumbers in the meat juices or remaining oil. Then arrange the cucumbers and chicken on a plate and top with the cream. This really makes a generous portion!
