Chicken breast stuffed with jalapeño dip

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 jalapeño(s)
  • 100 g cream cheese
  • 60 g Cheddar cheese, grated
  • Flour
  • egg(s)
  • Breadcrumbs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Slice and deseed the jalapeño, then cut into small pieces and place in a bowl. Add the cream cheese and grated cheddar and mix. Cut the chicken breast fillets horizontally down the side to the middle and fill with a few tablespoons of the jalapeño cheese mixture. Coat the chicken breast fillets in flour, brush with the beaten egg, and then coat in breadcrumbs. Then fry in a pan with a little oil until browned on both sides. Meanwhile, preheat the oven to 180°C (fan oven). Once browned, place the chicken breast fillets in the hot oven for 20 minutes.
