Chicken breast with Balkan vegetables

Ingredients for 4 servings:

  • 800 g chicken breast
  • 600 g vegetable mix (Balkan vegetables)
  • 1 m.-sized onion(s)
  • 30 g 8 herbs, frozen
  • 500 ml tomatoes, pureed
  • 200 g feta cheese
  • 200 ml cream
  • 3 tbsp olive oil
  • n. B. Maggi

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

From the oven

Preheat the oven to 200°C (top/bottom heat). Finely dice the onion and coarsely dice the feta. Briefly fry the chicken breasts in oil in a deep pan. Place the chicken breasts in a deep casserole dish and keep warm. Sauté the onion in the oil until translucent, then add the vegetables and fry briefly. Add the tomatoes, cream, and herbs to the vegetables. Season with Maggi and simmer for about 5 minutes. Spoon the vegetables over the chicken breasts and scatter the feta on top. Place in the oven and cook for about 25 minutes.
