Chicken breast with beans, bacon, mushrooms and onions

Ingredients for 3 servings:

  • 400 g chicken breast
  • 150 g beans, green, fresh
  • salt water
  • 100 g sliced ​​breakfast bacon
  • 200 ml vegetable stock
  • 2 tsp sour cream, reduced fat
  • 1 onion(s)
  • n. B. Mushrooms (e.g. button mushrooms, quantity as desired), fresh or canned

  • Paprika powder

Cut the chicken breast into bite-sized cubes and marinate with olive oil, salt, pepper, curry powder, chili flakes, and paprika powder. The curry powder should predominate. While the marinade is taking effect, wash the beans, trim the ends, and cut into approximately 5 cm pieces. Boil them in salted water for 5 minutes. In the meantime, dice the bacon, ring the onion, and slice the mushrooms. When the beans are done, remove them from the water and sear the chicken breast in a pan. Then transfer the meat to a bowl and sear the onions and bacon. After 1-2 minutes, add the mushrooms and beans. After another 3 minutes, add the chicken breast, sour cream, and vegetable stock, and bring everything to a boil. After 1-2 minutes of cooking, thicken the sauce with cornstarch. Served with rice, it works best.
