Chicken breast with cream cheese and broccoli filling

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 tsp, heaped herbs, Italian
  • 1 tsp, heaped paprika powder, sweet
  • 1 tsp, leveled garlic granules
  • 1 tsp, crushed paprika powder, hot
  • 140 g cream cheese
  • 2 cups broccoli florets
  • ½ cup bell pepper(s), diced
  • ½ cup cheddar cheese
  • ¼ cup Parmesan cheese
  • 2 garlic cloves
  • Olive oil for frying
  • salt and pepper

Separate the broccoli florets from the stump and chop into small pieces. Pre-cook the pieces in hot water or with 3 tablespoons of water in the microwave for 2-3 minutes. Dice the bell pepper. Preheat the oven to 200°C (top/bottom heat). Blend the spices into a seasoning mix. Season the chicken breast fillets with salt and pepper and rub them with the mixture. For the filling, combine the cream, Cheddar, and Parmesan cheeses with the broccoli, bell pepper, and 2 crushed garlic cloves. Season the filling with salt and pepper. Cut the seasoned chicken breast fillets open lengthwise and fill the resulting pocket with plenty of filling. Then slightly press the opening shut and secure it with 2-3 toothpicks to prevent any filling from escaping. Heat a little olive oil in a large pan and briefly sear the filled fillets on both sides until they get a nice brown color. Then wrap the fillets loosely in aluminum foil and bake in the oven for 15-20 minutes. Serve with rice and a green salad.
