Chicken breast with halloumi

Ingredients for 2 servings:

  • 1 chicken breast fillet(s), double
  • 1 halloumi
  • 500 g cocktail tomatoes
  • Pesto, green
  • Basil, frozen
  • 1 tsp pepper
  • 1 tsp salt
  • 5 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Cut the chicken breast fillet in half and place it in a bowl with the washed cherry tomatoes, oil, salt, and pepper. Toss everything well. Place it on a baking tray lined with aluminum foil and spread it out. Distribute a teaspoon of basil on each fillet. Slice the halloumi and top the fillets with it. Place the baking tray in a preheated oven at approximately 200°C (400°F) and bake for 15 minutes. Then turn on the grill and grill for another 10 minutes. Remove the chicken fillets from the tray and bake the tomatoes for another 10 minutes (convection oven). Brush the chicken breast fillets with a little green pesto and serve with the baked tomatoes.
